Stir-fried leek

Barkan luchnik is a traditional Bulgarian dish that is easy and quick to prepare with ingredients you usually have at home.

Stir-fried leek

Ingredients

1 cup yogurt
1 teaspoon baking soda
1 teaspoon baking soda
4-5 tablespoons oil
3-4 eggs
2 cups flour
1 teaspoon salt
1/4 kg ground meat
2-3 onions
1-2 tablespoons lyutenitsa
1 pepper
parsley
savory
black pepper

Method

  1. Preheat the oven to 180°C.
  2. In a large bowl, beat 3-4 eggs with 1 tsp salt.
  3. Add 1 cup of yogurt to the eggs and mix well.
  4. Add 1 tsp baking soda and mix again. If you are using American baking soda, add it as well.
  5. Gradually add 2 cups of flour, stirring with a spoon until you get a thick batter the consistency of cake batter.
  6. In a separate pan, heat 4-5 tbsp oil over medium heat.
  7. Finely chop 2-3 onions and add them to the pan. Fry until the onions are translucent and softened, about 5-6 minutes.
  8. Add 1-2 tbsp of lyutenitsa to the onions and mix well.
  9. Dice 1 pepper into very small cubes and add it to the pan. Fry for another 2-3 minutes.
  10. Add 1/4 kg of ground meat to the pan and break it up with a spoon so that no large lumps remain. Fry until the meat changes color and is cooked through.
  11. Season the mixture with 1 tsp black pepper, finely chopped parsley, and savory. Mix well.
  12. Grease a baking dish measuring about 20x30 cm with a little oil.
  13. Pour half of the batter into the baking dish and spread it evenly.
  14. Spread the meat filling evenly over the batter.
  15. Cover the filling with the remaining half of the batter.
  16. Bake in the preheated oven at 180°C for about 30 minutes or until the luchnik is golden brown.
  17. Remove the luchnik from the oven and let it cool slightly before slicing and serving.
