Chicken soup
Chicken kurban chorba is a traditional Bulgarian soup made with chicken meat, vegetables, and rice.

Ingredients
500 g chicken
1 onion
1 cup rice
1 carrot
2 tomatoes
3 potatoes
4 tbsp oil
1 egg
savory

parsley
1 dried hot pepper
paprika
salt
Method
- Chop the onion very finely. You can use a food processor to speed up the process.
- In a deep pot, heat 4 tbsp. of oil over medium heat. When the oil is hot, add the chopped onion.
- Sauté the onion, stirring occasionally, until it softens and becomes translucent. This takes about 5-6 minutes.
- Add 500 g of chicken, cut into small pieces. Fry the meat together with the onion until the meat changes color and is lightly sealed.
- Cut 1 carrot into small cubes, about 1 cm. Add it to the meat and onion and cook for another 2-3 minutes.
- Pour everything with 5 cups of water. Make sure the water covers the meat and vegetables.
- When the water boils, reduce the heat and let the soup simmer. Remove the foam that forms on the surface.
- Cut 3 potatoes into cubes, about 1 cm. Add them to the soup.
- Peel 2 tomatoes and grate them on a coarse grater. Add them to the soup.
- Add 1 cup of rice to the soup. Stir well to prevent the rice from sticking to the bottom.
- Add 1 tsp. of red pepper, savory, thyme, and salt to taste. Stir well.
- Let the soup simmer over low heat until the potatoes and rice are fully cooked. This takes about 15-20 minutes.
- Beat 1 egg in a small bowl. Slowly pour 2-3 tbsp. of the hot soup into the egg, whisking constantly to prevent the egg from curdling.
- Pour the egg mixture back into the pot and stir well. Let the soup simmer for another 1-2 minutes, without boiling.
- Remove the pot from the heat. Crumble 1 dried hot pepper and add it to the soup.
- Serve the chicken kurban soup hot, sprinkled with finely chopped parsley.
