Traditional Bulgarian chicken soup

Ingredients
chicken400 gr
potatoes2 pcs
carrots1 pcs
onion1 pcs
broth1.2 l
fresh parsley15 gr
oil2 tbsp
salt1 tsp
ground black pepper0.5 tsp
Method
- Chop the onion and carrot into small cubes, the potatoes into medium cubes, and the chicken into bite-sized pieces.
- In a suitable pot, heat the oil over medium heat and sauté the onion and carrot for 3-4 minutes, until softened.
- Add the diced chicken and fry for a few minutes, until it turns white on all sides.
- Pour the broth into the pot, season with salt and black pepper, and bring to a boil. Reduce the heat and simmer for about 15 minutes.
- Add the diced potatoes and continue cooking for another 15-20 minutes, until the potatoes and meat are fully tender.
- Remove the soup from the heat, sprinkle with finely chopped fresh parsley, and serve hot.
