Focaccia with rosemary

Ingredients
500 g all-purpose flour
2 tsp salt
20 g fresh yeast
1 cup
4 tbsp olive oil
1 tbsp fresh rosemary
3 tbsp olive oil
1 garlic clove
1 tsp oregano
4 tbsp olives
Method
- Sift 500 g of white flour into a large bowl. Add 2 tsp of salt and stir.
- In the center of the flour, make a well. In it, dissolve 20 g of fresh yeast in 1 and 1/2 cups of lukewarm water. Add 4 tbsp of olive oil.
- Start mixing the ingredients with a fork or by hand, gradually adding the flour from the sides to the liquid ingredients. Knead for about 5-10 minutes until you get a soft, smooth, and elastic dough that does not stick to the table.
- Shape the dough into a ball, place it in a bowl greased with a little olive oil, cover with plastic wrap, and let it rise in a warm place for 1 to 1 and 1/2 hours until it doubles in volume.
- After the dough has risen, knead it lightly together with 1 tbsp of finely chopped fresh rosemary.
- Divide the dough into two equal parts. Shape each part into a ball and roll it out with a rolling pin to a thickness of about 1 cm and a diameter that will cover the bottom of two baking pans.
- Grease the bottoms of the two pans with a little olive oil and place the rolled-out dough balls in them. Cover the pans with plastic wrap and let them rise in a warm place for about 30 minutes.
- After the dough has risen for the second time, use your fingers to make deep indentations all over the surface of each focaccia. Drizzle them with a little olive oil and let them rise for a third time until they double in volume.
- Skewer 4 tbsp of olives with a fork so they do not pop out during baking.
- In a small bowl, mix 3 tbsp of olive oil, 1 clove of finely chopped garlic, and 1 tsp of oregano. Spread this mixture evenly over the two focaccias.
- Preheat the oven to 200°C. Bake the focaccias for about 25-30 minutes or until they are golden brown and crispy.
- Remove the finished focaccias from the oven and let them cool for a few minutes in the pans. Then carefully remove them and place them on a wire rack to cool completely.
