Traditional Bulgarian tarator

Ingredients

Cucumber400 gr
Yogurt500 gr
Cold water400 ml
Garlic3 pcs
Fresh dill15 gr
Walnuts50 gr
Oil or olive oil2 tbsp
Salt1 tsp

Method

  1. Wash the cucumber and cut it into small cubes or grate it on a coarse grater.
  2. Peel the garlic cloves and crush them with a pinch of salt in a mortar or press them with a garlic press.
  3. Finely chop the fresh dill and coarsely chop the walnuts.
  4. In a large bowl, whisk the yogurt with a whisk until smooth, then gradually add the cold water and stir well.
  5. Add the chopped cucumber, crushed garlic, dill, oil (or olive oil), and the remaining salt to the milk mixture.
  6. Stir all the ingredients well. Optionally, sprinkle with chopped walnuts before serving and chill in the refrigerator for at least 30 minutes.
